Meatball Sub Casserole (from: www.delish.com)
Ingredients:
1 lb ground beef
2 cloves of garlic, minced
1 large egg
⅓ cup bread crumbs
2 T freshly chopped parsley (plus more for garnish)
Kosher salt
Freshly ground black pepper
1 T vegetable oil
For the Casserole:
Cooking spray
1 baguette (sliced ¾ inch thick)
¼ cup (½ stick butter, melted)
2 cloves garlic, minced
1 tsp. Italian seasoning
Kosher salt
Freshly ground black pepper
2 c freshly shredded mozzarella cheese, divided
3 c marinara sauce
Directions:
Preheat oven to 400 degrees. Make meatballs: In a large bowl combine ground beef, garlic, egg, bread crumbs and parsley. Season generously with salt and pepper, then stir together until just combined. Form into 30 evenly sized meatballs.
In a large skillet over medium-high heat, heat oil. Cook meatballs, in two batches, until no pink remains, 5 to 6 minutes, then drain on a paper towel-lined plate.
Grease 9 x 13 baking dish with cooking spray. Place baguette slices in an even layer in the bottom of the dish. In a medium bowl, stir together melted butter, garlic, and Italian seasoning and season with salt and pepper. Brush all over baguette. Top with 1 cup mozzarella, an even layer of marinara, meatballs and remaining mozzarella.
Bake until cheese is melty, 12-15 minutes. Garnish with parsley before serving.
Chili Cheese Dog Casserole: (from: www.delish.com)
Ingredients:
1 8 oz can refrigerated crescent dough
8 hot dogs
1 c cheddar cheese
2 15 oz cans of chili
2 tblsp. butter, melted
1 tsp. finely chopped chives
½ tsp. garlic powder
Directions:
Preheat oven to 375 degrees. Roll out crescent dough and pinch the perforations together to seal. Cut into 8 even squares. Sprinkle cheddar on each square and roll around hog dogs.
Spread chili in an even layer on the bottom of a 9 x 13 baking dish. Place hot dogs in a row side by side on top of chili.
In a small bowl combine melted butter with garlic powder and chives. Brush over hot dogs and place in the oven to bake for 30 minutes, covering with foil if the crescent dough begins to get too dark. Top with more chives and serve.
